Ingredients:

200g oats

100g mixed nuts (almonds, walnuts, or pecans), roughly chopped (optional)

50g desiccated coconut (optional)

50g mixed seeds (pumpkin, sunflower, or flaxseeds) (optional)

2 tbsp peanut butter

3 tbsp honey or golden syrup

1 tbsp tahini (optional)

1 tbsp olive oil

1/2 tsp salt

Step 1
Prepare the Dry Ingredients:
In a large bowl, mix the oats, nuts, desiccated coconut, and seeds until evenly combined.

Prepare the Wet Ingredients:
In a separate bowl, combine the peanut butter, honey or golden syrup, tahini (if using), olive oil, and salt. Stir well until smooth. Gradually add water, a little at a time, until the mixture reaches a pourable consistency.

Combine Wet and Dry Ingredients:
Pour the wet mixture over the dry ingredients and mix thoroughly, ensuring everything is evenly coated.
Step 4
Bake:
Preheat your oven to 180°C (160°C fan)/Gas Mark 4. Spread the granola mixture evenly onto a lined baking tray. Bake for 20-25 minutes, stirring halfway through, until golden and crispy.
Step 5
Cool and Store:
Remove from the oven and let the granola cool completely before transferring it to an airtight container. Store at room temperature for up to two weeks.
