Ingredients: 

Carrots, peeled and evenly chopped

1 lemon, sliced

Olive oil

Honey

Salt & black pepper

Fresh parsley

Toasted nuts (e.g. almonds, hazelnuts)

Preheat oven to 200°C.Place carrots and lemon slices in a baking tray.

Drizzle with olive oil, honey, and season with salt and pepper. Roast for 20–40 minutes (depending on carrot size) until golden and soft.

Plate up and finish with chopped parsley, a drizzle of honey, toasted nuts, and roasted lemon slices.

Enjoy warm as a side or on their own!
