Ingredients:

Lilos pasta

Good quality sausages
-
Olive oil
-
Green olives
-
Plum tomatoes, chopped

Pasta water
-
Parmesan, cheddar, or your fave cheese
-
Fresh parsley
Prepare
Boil salted water and cook your pasta. Save a cup of that pasta water before draining.
Sausages
Meanwhile, remove the skins from the sausages. Break into small chunks and fry in olive oil until browned and cooked through.
Fry
Add chopped olives and tomatoes to the pan. Splash in some pasta water to loosen the sauce. Simmer for a few minutes until it all comes together.
Assemble
Add in the pasta and toss everything to coat.
Serve
Top with your favourite cheese, some chopped parsley, and dig in.
