Ingredients: 

  • 1 small cabbage (or leftover cabbage from Christmas)

  • 100g chorizo or bacon (or any meat of your choice)

  • 1 egg

  • 2–3 tbsp flour

  • Salt and pepper, to taste

  • Oil, for frying

  • Optional: eggs, to serve on top

Chop the cabbage and cook it in a pan until soft. Once cooked, squeeze out any excess water and transfer to a bowl.

In a frying pan, cook the chorizo or bacon until golden and cooked through. Add it to the cabbage.

 

Add the egg, flour, salt, and pepper to the cabbage mixture and mix well.

Heat a frying pan with a little oil. Shape the mixture into patties and cook each side until golden and cooked through.

Place the cooked patties on a kitchen towel to remove any excess oil. Optional: Using the same pan, fry some eggs and serve them on top of the patties.
