Ingredients:

2 pounds medium carrots (about 8)

1½ tbsp honey

1 tsp kosher salt

Chopped fresh parsley leaves, for garnish (optional)
Preheat
Preheat the oven to 425°F (220°C). Arrange a rack in the middle of the oven.
Peel & Trim
Peel and trim the carrots. Cut them into 2-inch pieces. For thicker carrots, halve or quarter them lengthwise to about ½ to ¾ inch thick. Place on a rimmed baking sheet.
Assemble
In a small oven dish, add your carrots and drizzle honey. Season with salt and pepper, then toss to coat evenly. Spread the carrots into a single layer.
Roast
Roast for 15 minutes, toss, and roast for another 15–20 minutes until tender and golden brown.
Serve
Drizzle more honey glaze over the carrots (optional) Transfer to a serving dish. Garnish with parsley, if using.
